I'm excited for all of our lamb cuts this year, but I am ESPECIALLY excited about these beautiful racks. They are "frenched" (cut so the rib bones are exposed). You can cook them as is for a beautiful (and delicious) centerpiece or slice in between the bones for lamb "lollipops".
