Whole Lamb Deposit
Thank you for choosing to support our small farm and the commitment we make to our land, the welfare of our animals, and good, honest food. Bringing a whole animal into your kitchen is one of the most meaningful and impactful ways to spend your hard earned dollars. When you reserve one of our Ulster County, 100% grass-fed and finished Icelandic lambs you are not just buying meat (although you are doing that too!), you are making a conscious decision to connect your food supply to a single animal, a single season and a single (local) place.
Your deposit reserves one whole lamb from the upcoming fall 2026 harvest. The remaining balance is due upon pickup. Please note that the deposit is non refundable. Each lamb is professionally processed according to your specifications at our USDA butcher, Nello’s Speciality Meats. Each cut will be individually wrapped and vacuum sealed and ready for your freezer.
How it works:
*Upon receiving your deposit, one grass-fed/grass-finished Icelandic lamb (born, raised and grazed on our farm) will be reserved in your name. You will also have the option to order additional ground lamb (5 or 10 lbs) and/or lamb sausages (5 or 10 lbs) at a discounted price.
*In early October, I will reach out with a cut sheet so that you can determine how you want your lamb processed. I’m happy to help during this process if you are new to whole animal butchering, and can recommend my favorite cuts.
Pricing:
*Whole Icelandic Lamb Shares — $20/lb
Shares are priced by the final packaged weight of meat you take home. Most whole lamb shares will include approximately 22–30 lbs of meat, depending on the size of the lamb and your butcher-cut selections. Slaughter and butchering fees are included in your price. Packaged weight refers to your meat cuts, including bone-in cuts such as racks, ribs and roasts. Separate soup bones, organs and fat are not included in the final weight.
Estimated total: $440–$600 per whole lamb.
*Bulk Ground Lamb $15/lb for 5lbs & $14/lb for 10lbs (typically $16/lb)
*Bulk Lamb Sausage $21/lb for 5lbs & $20/lb for 10lbs (typically $22/lb)
Pick up:
*Your on farm pick up date will be scheduled and your final price will be given when your lamb is ready, but it will likely be sometime the last week of October. Final payment is due at pick up.
Why buy a whole lamb?
*You are purchasing a whole animal whose entire life can be traced to a single location (our farm). Your lamb is 100% grass fed on our 77 acres of beautiful Hudson Valley property and has been given no hormones, antibiotics or anything other than pasture, mother’s milk and organic sheep mineral blends. It’s meat you can feel good about.
*You will get between 22-30lbs of take-home meat that can fit in a regular sized freezer. We are here to answer any questions on how to cook your lamb and each lamb share customer will go home with a recipe booklet including some of our favorite recipes.
*Your lamb will be cut according to your specifications so you get exactly what you want. You also are guaranteed the parts that sell out fast (chops/racks).
*You get first pick on our naturally tanned Icelandic sheep skins before they are made available to the public (these usually sell out SO fast!).
What does a typical lamb share include:
Items will vary depending on what cuts you choose, but a typical box may look something like:
*6-8 loin chops · 2 racks of lamb · 3 lb stew meat · 2 shoulder roasts · 2 leg roasts · 2 packs ribs/riblets · 4–5 lb ground lamb
